Sweet Potato Chips

- Peel and slice sweet potatoes as thinly as possible.
- Place in a bowl and soak in water for 1 hour, changing the water at the half hour point.
- Place on a towel to dry a bit.
- Drizzle coconut oil on them. Stir and coat evenly.
- Generously season your sweet potatoes with unrefined sea salt.
- Place the sweet potatoes into a dehydrator and dehydrate at 145-155°F for about 12 hours.
- Check your potatoes periodically to get your desired crispness.
- If using an oven, turn on lowest setting and leave the door slightly open.
- Place sweet potatoes onto a cake cooking rack so that it gets proper ventilation on all sides.
- Cook until desired crispness.
Zucchini Chips

- Wash zucchini and cut off ends. Slice zucchini easiest way for you. I use a food processor or mandolin slicer to get the slices even.
- Place zucchini in a bowl. Add oil and toss with hands to coat evenly so sliced don't stick together. Add spices and toss.
- Place in a dehydrator in a single layer. Dehydrating time depends on your machine and how thick your zucchini slices are cut. Put on in the evening and by morning they are done!
Grain-Free Raw Coconut Granola

- Set aside 4 cups of the coconut flakes.
- Put all wet ingredients and spices into a pan. Warm over a very low heat and stir to blend the flavors. Do not use a high heat.
- Chop the coconut flakes into the size of oats. Add the chopped coconut flakes to the liquid. Turn off heat.
- Chop the nuts up if you want to make a breakfast cereal substitute.
- Add the wet portion to the remainder of your dry ingredients, and stir until it's well-blended.
- Store in an airtight container. It will keep for weeks, if it lasts that long!
Apple Sandwich

- Core the apple. Cut into about 1/2 inch slices. Then spread the nut butter on a slice along with the chocolate chips or nuts, and simply top it with another slice of apple!
Brown Rice Crackers

- Preheat oven to 375°F. Lightly oil large baking sheet. In bowl or food processor, mix flour, rice, Flax seed, salt, and oil until combined. Add water a little at a time until dough hold together.
- Pour onto floured surface and knead a few times to form a ball. Press or roll dough thin on baking sheet.
- Score into 1 by 1 squares or 1 1/2" by 1 1/2" squares.
- Bake 20 - 25 minutes, or until golden brown. Cool before removing from pan.
- Can also add salt on top of them before baking as well as sesame seed or butter.
