Eggplant Chili

Ingredients:

  • 1 eggplant cubed
  • 4 roman tomatoes diced
  • 1 onion thinly sliced
  • 1/4-cup coconut oil
  • 1/4-orange bell pepper diced
  • 1 1/2-cup cooked black beans
  • 1 1/2-cup cooked red kidney beans
  • 2 cloves garlic
  • 1/3-cup water
  • 1-cup water
  • 2-tsp. salt
  • 2-tbsp. chili powder
  • 1/8-tsp. cayenne pepper (optional)

Direction:

  • On medium high heat, sauté onions till lightly browned.
  • Add chili powder, salt, garlic, and cayenne to 1/3-cup water and mix well.
  • Add seasoning/water mixture to onions.
  • Sauté 1 minute, then add bell pepper, tomatoes, 1 cup water, eggplant and all the beans. Bring to a boil, cover, reduce heat and simmer 20 minutes
