Eggplant Chili

Direction:
- On medium high heat, sauté onions till lightly browned.
- Add chili powder, salt, garlic, and cayenne to 1/3-cup water and mix well.
- Add seasoning/water mixture to onions.
- Sauté 1 minute, then add bell pepper, tomatoes, 1 cup water, eggplant and all the beans. Bring to a boil, cover, reduce heat and simmer 20 minutes
